cooking foods for the holiday

Red Cabbage
this is from a friend in Sweden.
A dish they make for Chirstmas

1 red cabbage
1 yellow or red onion
4 sourish apples
2 tbsp margarine or vegetable oil
8 cloves
5 Jamaica peppers
1-2 tbsp sugar
3 tbsp wine vinegar or lemon juice
salt to taste

Proceed as follows:
Cut the red cabbage into thin slices. Cut the apples (without
the cor and peels) into peices.
Slice the onions.
Melt the butter in a large pot over medium heat.
Add the cabbage, onion , apples, spices, vinegar and salt.
Cook covered over low heat for one hour, stiring occasionally.
Add more vinegar or lemon juice according to taste.
Serve hot.
If prepared during high season for red cabbage (autumn-early winter),
the dish can be deep frozen and kept for a least half a year.
